Quinoa, feta & spinach salad

 

Ingredients

°          200g quinoa (buy from health food shops and larger supermarkets)

°          2 tbsp. olive oil

°         1 garlic clove, crushed

°          2 tsp. ground cumin

°          200g block feta cheese, crumbled

°          ½ cucumber, chopped

°          150g spinach, roughly chopped

°          4 spring onions, shredded

 

 

Method

  1. Cook the quinoa according to pack instructions. Drain well then toss with 2 tbsp. oil, garlic and cumin while still warm and season.
  2. Toss through the rest of the ingredients and serve.
