Charred pepper, bulghar and aubergine salad




  • 175g bulghar wheat
  • 2tbsp sundried tomato paste
  • 4baby aubergines (sliced lengthways)
  • 1 red pepper (sliced lengthways)
  • 2 tsp. olive oil




1) Prepare the bulghar according to the pack instructions. Tip into a large bowl and stir through the tomato paste.

2) Heat a griddle pan to a high heat. Drizzle the peppers and aubergines with the oil and griddle for 5 minutes until lightly charred.

3) Stir the aubergines and pepper into the bulghar mixture and season.
