Baked turkey meatballs with broccoli and crispy sweet potato (serves 4)

 

Ingredients

 

1 onion, grated

1 large carrot, grated

3 garlic cloves, crushed

350g minced turkey

4 sweet potatoes, skin on cut in to small cubes

400g cherry tomatoes

2 tbsp. grated parmesan

350g thin-stemmed broccoli

 

Method

 

1. Heat the oven to 200C fan.  In a large bowl, combine the onion, carrot, and half the garlic with the turkey mince and some seasoning. Shape in to 16 meatballs and put on a baking sheet. Toss the potatoes with the remaining garlic and drizzle with oil then place on another baking sheet. Place both in the oven for 20 minutes.

2. After 20 minutes take the meatballs out and drain off any juices. Pour over the cherry tomatoes and sprinkle with parmesan.  Pop back in the oven for 20 minutes.

3. Once the meatballs and potatoes are almost done, cook the broccoli for 3-4 minutes.
