Growing up in the Middle East and travelling between its regions,
Executive Sous Chef Abdel Sawy, would like to share with you a selection of traditional Middle Eastern dishes from Moroccan, Egyptian, Lebanese and Syrian cuisines, presented with a modern
twist and some of his own personal favourites.
Derived from the stigmas of the crocus flower, this magical spice was discovered more than 3000 years ago. It takes 150 flowers to produce one gram of Saffron, which is known for adding a glowing
golden colour and mysterious taste to Mediterranean and Arabic dishes.
It is called Zaafaran in Arabic and for the last 1000 years it has become one of the key ingredients to enhance flavours and express the Middle Eastern generosity in hospitality.
