• 150g caster sugar
  • 50g softened butter
  • 2 eggs
  • 4 tablespoons of water
  • 3 very ripe bananas
  • 200g plain flour
  • 1 teaspoon bicarbonate of soda
  • 1/4 of a teaspoon baking powder


  • Preheat oven to 180c/gas mark 4 and line a loaf tin of baking paper
  • In a medium bowl beat sugar and butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until well blended
  • Mix in the flour, bicarbonate of soda and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients
  • Bake until the top is firm to the touch and golden brown in colour. When bread is removed from the over, allow to cool on its side for 10 minutes, then remove from tin and let cool on wire rack
  • Enjoy!
